Cauliflower Couscous Salad

Can't decide what to cook for supper tonight?! Well, my colourful Cauliflower Couscous Salad has just come to the rescue! Not only is it packed full of all the good stuff (vitamins, magnesium, potassium, iron and fibre,) it's fresh, flavourful and filling too. Oh, and it's ridiculously quick 'n' easy to make! It simply requires...

1 whole cauliflower 

1 pomegranate 

1 red onion

100 g feta cheese

Juice of 1/2 a lemon

Handful of fresh coriander, mint and parsley

4 tbsp of pine nuts

This recipe will serve four (I suggest varying the quantities depending on how much red onion/cheese/pomegranate seeds etc. you would like to taste in the dish!)

Remove the stem and the leaves and cut the cauliflower into small florets. You may want to quickly rinse it under cold water to ensure there are no bugs or dirt lurking!

Place the florets into a food processor...

Let the food processor work its magic until the cauliflower resembles couscous! Next, pour the contents into a frying pan with a teaspoon of water. Place on the hob over a low heat. Keep stirring until you notice the water disappear, then remove from the heat. You don't have to cook the couscous, but it definitely takes away that raw crunch you'd otherwise taste.

Gather all of the other ingredients and begin the jolly easy process of assembling your salad!

First, place the cauliflower couscous into your salad bowl...

Add the finely chopped red onion...

Followed by the pomegranate seeds...

These delicious red jewels add a wonderful crunch and sweetness to the dish.

Pop in your (toasted) pine nuts!

Now scatter in the roughly chopped fresh bouquet of herbs...

Onto the salty chunks of feta cheese...

Stir all of the ingredients together...

Top with the juice of half a lemon (watch out for the pips!)

Then finish with a generous glug of top notch olive oil!

Just before you serve, sprinkle over some more pomegranate seeds and herbs to garnish.
