Zucchini Crisps

 

A healthier alternative to deep fried potatoes, these zucchini crisps are just as moreish and delicious. For this recipe, I literally picked out three ingredients and set to work. All you need is:

1 large courgette (zucchini)

2 tbsp of olive oil

Pinch of salt and pepper

Slice the zucchini into round discs, about 2 mm thick.

Place the zucchini slices in-between two pieces of kitchen paper and pat them dry. This ensures the crisps keep crunchy after cooking. Now pop the discs onto a lined baking tray and drizzle over 2 tbsp's of olive oil and a good pinch of salt and pepper.

Bake in the oven at 180 degrees for 18 to 20 minutes.
